Easter Dinner

I'm late in posting this but only because I forgot about the photo. I was in the hospital during Easter Sunday and my mom brought Easter dinner to me!

Menu:
Deviled eggs
Homemade mashed potatoes
Asparagus
Cranberry sauce

And the pièce de résistance...



Cornish hens stuffed with rosemary, thyme, and citrus fruits (lime, lemon, grapefruit, and orange)

They were fantastic! She had them in a brine overnight and then crusted the outside with salt, pepper, and olive oil. They were tender and juicy and AMAZING!
